Ascorbic Acid


Just wondering, is ascorbic acid a preservative? I bought a gallon of organic apple juice (which is quite delicious), and I poured half of it out into another container and added some yeast (for fun). I was wondering if ascorbic acid is a preservative because it's the only other ingredient besides apple parts.

I really just bought the juice for the gallon glass jug that I'll be making a starter in, but I figured I'd see what else can happen eh?
